Icy Bay Berry Blast

In August the berries in Icy Bay start to ripen up. Not only are we out there picking, but the bears our out there feasting on berries this time of year. In Icy Bay we have acres of Wild Strawberries, Salmon Berries, and Nagoon Berries. In Icy Bay there are huge tides that affect the times of day you can travel the beaches searing for the berry patches. George and I looked at the tides and picked a good day to travel the beaches. On this day we have about four houres on an out going tide. We got up early because there was a outgoing tide a 6:30 am, so by 9:00 am we will be able to leave the yard by ATV and get out to Riou Bay to our secret berry patch that is filled with Strawberry and Nagoon Berries. Riou Bay is about 10 miles by beach from where our cabin is. We picked for about an hour and got about a gallon of strawberries and nagoon berries. Since we had plenty of berries then we ate our fill till we were stuffed. We loaded up our berries and headed out to Riou Beach to look for Japanese Glass Balls. The surf was really high and when we got out to the beach we looked out and saw whales. We saw migrating Grey Whales going by and seals in the mouth of Icy Bay. Well the tide is coming in and we have to start heading back. On the way back to our cabin we stop on a trail and pick a gallon of Salmon Berries. We spotted a Sow Brown Bear and cubs eating strawberries in a patch we had just came from. Glad we did not have a run in with her!

We made it back to the cabin at about 3:30pm. Now it is time to wash the berries and make jam and preserves. This particular batch turned our awesome. Strawberry, Nagoon Berry and Salmon Berry. I use the recipe that comes with the box of Pectin. You can find recipes in cook books, but I have found that the one that comes with the box of pectin is the best. Pectin is the firming ingredient that you use when making jam and jellies. You can find it in any grocery store and I see a lot of canning and jarring supplies at places like Wal Mart, but you should be able to find everything you need at your local grocery store. I like using the liquid pectin it comes in a box with 2 pouches. You can buy pectin that comes in a box that looks like Jello, but I like the liquid one better and have had better luck with it. I have come to find out that when you use wild berries that I have had to use extra powdered pectin because the wild berries have a lot of water in them, more so than store bought berries. So when using powdered pectin for a wild berry recipe I use an extra 1/2 box of powdered pectin. I have not had to do that with the liquid pectin. If your jam or preserves do not firm up do not worry, it has happened to me and the jam is still great, reminds me of spreadable fruit!

  1. I have been looking for blogs the incorporate recipes that use dehydrated foods in everday cooking. Since me and my husband live in an area that is affected by hurricanes there are times when we have to live eating our food storage. Food storage is good but I have been trying to find recipes that help us so we aren’t always eating the exact same thing. Thanks for your great post!
